Summary of Duties: Incumbent performs various tasks or sequence of tasks in food service and preparation. Ability to prepare all types of meats, poultry, seafood, vegetables, fruit, sauces, and gravies for menus. Incumbent will be responsible to prepare, cook, season and portion food by following standardized recipes at different levels of difficulty and plan, regulate, and schedule cooking procedures so that numerous completed food products are ready at appropriate temperature and time. Monitoring temperatures and steam pressures, evaluate the condition of food being cooked at frequent intervals. Ability to modify recipes for ingredient quantities, number of servings and size of equipment available. May perform cleaning of serving carts, food preparation areas, cupboards, drawers and dishwashing areas. Responsible for complying with security, fire, sanitation rules, policies, procedures and regulations. Ensure compliance with US Agriculture (USDA) Child and Adult Care Food Program (CACFP), and all pertaining standards, policies, and regulations.

Qualifications: Incumbent must be 18 years of age and High School Graduate or equivalent. Ability to speak, read and understand written material. Incumbent needs to have skills necessary to overcome practical production problems and initiate corrective action when an item does not meet quality standards. Knowledge and ability to develop standardized recipes including the techniques and procedures necessary to develop new or revise current recipes. Incumbent must have working knowledge of sanitation standards and procedures to prevent contamination. Must complete all Department of Navy (DoN) training requirements.

Conditions of Employment: Ability to obtain food handlers card. Ability to favorably pass a pre-employment physical, provide evidence of immunization and be free from communicable disease. Must satisfactorily complete all background checks in accordance with federal regulations. Incumbent must be able to frequently lift objects weighing over 40 pounds with assistance of lifting devices or other workers.
